So if you guys are anything like me you run out of things to cook not food but ideas so I was thinking if we share what we are having for dinner it might spark an idea for someone else.

I keep having to remind myself that American gravy is not the same thing as European gravy, for a moment there that sounded like a grotesque pregnancy craving lol What you refer to as gravy we call jus, sauce, or gravy, depending upon what it is.

Didn't do any cooking yesterday but made some Elder flower cordial and wine.

Elder Flower Cordial - River Cottage recipe

About 25 elderflower heads
Finely grated zest of 3 unwaxed lemons and 1 orange, plus their juice (about 150ml in total)
1kg sugar
1 heaped tsp citric acid (optional)

Inspect the elderflower heads carefully and remove any insects. Place the flower heads in a large bowl together with the orange and lemon zest.
Bring 1.5 litres water to the boil and pour over the elderflowers and citrus zest. Cover and leave overnight to infuse.

Strain the liquid through a scalded jelly bag or piece of muslin and pour into a saucepan. Add the sugar, the lemon and orange juice and the citric acid (if using).

Heat gently to dissolve the sugar, then bring to a simmer and cook for a
couple of minutes.

Use a funnel to pour the hot syrup into sterilised bottles. Seal the bottles
with swing-top lids, sterilised screw-tops or corks.

Elderflower Wine

1 pint jug full of elderflowers
8 pints of boiling water
3 lbs of sugar
Juice and rind of 2 lemons
dash of white wine vinegar
tsp of wine yeast

Remove the elderflowers from the stalks, rubbing gently help as the ones not ready will remain on the stalks. Dissolve the sugar in a couple of pints of boiling water. Then add the elderflowers, lemon juice and rind. Add the rest of the water and the white wine vinegar whilst stirring. Make up the yeast and add to the mixture, making sure it isn't too hot, stir in and then cover and leave for 2 days giving it a stir twice a day. After 2 days (48 hours), strain it off through muslin (I use a lean pair of stockings!) to remove all the bits and pour it into a demijohn and add an airlock. Put it somewhere warm like an airing cupboard or a warm spare room that gets full sun and leave until it stop bubbling, this is easy to spot if you use an airlock. This can take days. Once it has stopped pour it off into bottles and cork it. The longer you leave it the better it will be.

Note to Hay Fever sufferers!

Although the aroma from Elderflowers is blissful, they are truly evil if you suffer from hay fever, try to deal with the flowers outside or away from living spaces. Trust me, if you don't you will suffer, a lot, more than normal flowers.

As a treat for my hubby who works away I made him homemade pâté starter, pork fillet rolled in herbs and a garlic and ginger stuffing with fresh steamed vegetables and confit potatoes. Then a sort of made up dessert of a layer of thin sponge soaked with kirsch, layer of thick chocolate cream, morello cherries, another of kirsch soaked sponge, choc cream cherries, sponge then cho mouse and decorated with more cherries. Oh and a board of all his fav cheeses except by that point I had stuffed him so didn't want it.
