The snippet doesn't actually say that the one who did the beating and the vampire who performed the turn are one and the same. I know it is easy to infer that this is the case, but you know how Connie's wonderful snippets can turn out completely different to our speculations once we see them in context (spot on Robbytonk).
Yeah I have say it's unlikely that Gavin would go that far, maybe the turning, to save someone from a death they didn't deserve, but not the beating. From everything we've seen in all the books Gavin is a very by the books kind of guy and the vampires for the most part believe in the quick kill(hence the beheading). You also have to remember, that as long as this series takes place after the High Demon series(we all can agree that time holds little meaning in any of the authors books), Gavin will have seen that Lissa is willing to cut her ties with her mates if they cross the line and from everything Gavin's done he would never risk losing Lissa again. Now that's not to say one of the Gods wouldn't mess with Gavin's head and make him do something he wouldn't normally but that wouldn't be the real Gavin then would it?
